Has anyone ever seen a tenured faculty member just walk away and provide no notice? Like collect paycheck during the summer and then just not show up to classes Sept 1? How difficult would it be for the university to enforce "penalties" on a professor who just never came back and left academia entirely?

Most places still put faculty without special/admin appts on standard 9 month contracts, and give them the option of spreading out compensation over 12 months. For most of us, those June/July/August paychecks are delayed payment for work already completed.

You really think I don't know this? That's why I said you're entitled to summer pay checks. Typically, Sept is your first paycheck of a school year and August is your last.
Taking your summer paychecks with an intention of bailing come the end of August isn't you getting paid extra, it's you getting paid for work you've already done.

That's not quite correct, at least not for my institution.
The fiscal year starts on July 1, but my contract year runs from August 16 through May 15. I get 24 bimonthly paychecks, but I couldn't get "two months of pay without doing any work" if I quit in September. I'm always getting paid for work I already did.

Yep. The 9-month nature of the contract means you get paid over the summer for work you've already done. At many places, you can elect to get your money all when you earn it; the 12-month pay cycle is really something in place to help smooth consumption throughout the calendar year.
